I’ve always loved broccoli, even as a kid!

Two of my children like broccoli as well, but my middle son, well, he’s a different story. The only vegetable he likes is tomato. And technically, tomato isn’t even a vegetable!

So I thought, how can I get my kids to eat more vegetables?

Back when I was eating low fat, high carb, most of our vegetables were pretty plain. I would steam them on the stove and serve them like that. No butter, no cheese, no sour cream. Maybe a little bit of salt and pepper, but that’s it!

But now that we eat high fat, low carb, I find our options endless for enjoying vegetables.

Often we love our vegetables topped with grass-fed butter! It’s delicious and simple. Sometimes though, I like to add even more, especially to vegetables that my middle son tends to not like.

The cheese and mayonnaise give this dish tons of flavour.

And guess what? My middle son ate it without complaining once!

Instructions
  1. Preheat oven to 350F.
  2. Bring a pot of water to boil and add broccoli florets. Cook for 2 minutes, until broccoli turns bright green. Immediately drain water from pot and set broccoli aside.
  3. Spray a casserole dish with cooking spray. Place broccoli in prepared dish.
  4. In a medium bowl, stir together mayonnaise, lemon juice, dijon mustard, and salt and pepper. Spread over top of broccoli (I use a rubber spatula to spread the mayo sauce. It will be a thin layer.)
  5. Sprinkle shredded cheese on top and bake in oven for 30 minutes, until cheese is bubbly and golden.
