I think I’m addicted to anything caprese!! There’s something about tomato, cheese, and basil that just stimulates my tastebuds and makes me feel good when I eat it. We are not big pasta eaters in our house. Sure, we have it once in a blue moon, but we prefer not to eat it because if feels very heavy. I always feel like I’m in a carb coma after I eat it. Instead, I look for ways to use veggies as “noodles.” And spaghetti squash is perfect for that! You may remember my Skinny Chicken and Pasta Bake recipe which also uses spaghetti squash. I find that if I mix tomato sauce or cheese with the squash, my kids are okay eating it.
I wasn’t sure how this one would go over with my boys, but they actually liked this Caprese Spaghetti Squash Bake! Like I said, I’m pretty sure it was the cheese mixed in that made the difference 😉 I used one spaghetti squash for this recipe and put everything in a square baking dish, which gave us about 5 servings. But if you wanted to feed a larger crowd, you could bake 2 spaghetti squash and put it into a 9 x 13″ pan.
This Caprese Spaghetti Squash Bake is a great side dish, or you could have it as a light vegetarian dish! You could also add a touch of balsamic glaze on top, I think that would be delicious!! Either way, I really think you and your family will enjoy this recipe!
