Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
In a large strainer, rinse and drain the chickpeas. Spread them out onto your prepared baking sheet and pat dry with a paper towel. The drier the chickpeas, the crunchier they will be.
Once dry, place the chickpeas into the oven and roast for 15 minutes. After 15 minutes, remove from oven and drizzle with olive oil. Use a spatula to stir the beans around to make sure they are evenly coated. Mix the cinnamon and sugar together in a small bowl and sprinkle over the beans. Mix around to coat the beans.
Place chickpeas back into the oven and roast for another 15 minutes.
Store at room temperature.
