  1. Preheat oven to 350F. Cut the cauliflower into florets and steam until tender.
  2. While cauliflower is cooking, add bacon to a skillet and cook until crispy. Chop bacon into pieces.
  3. Add the cooked cauliflower to a food processor and process until fluffy. Add the sour cream, cream cheese, butter, and garlic powder and process until it resembles mashed potatoes.
  4. Put cauliflower mixture into an 8 x 8 baking dish. Stir in half the cheese and green onions.
  5. Top the loaded cauliflower mash with the rest of the cheese, green onion, and bacon.
  6. Bake in oven for 15 minutes, until cheese is melted and bubbly.
