Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside.
In a large bowl, combine the nuts, seeds, coconut, raisins, and spices.
Melt the coconut oil in a small pot on the stove. Stir in the maple syrup, vanilla, and mashed bananas until combined.
Pour the banana mixture over the granola and stir it all together, making sure it's all coated in the banana mixture.
Spread the granola out on your prepared baking sheet and bake in the oven for 25 - 30 minutes, stirring halfway through so that it cooks evenly. Once the granola reaches a golden brown colour, remove from oven and let cool.
Store in an airtight container (preferably glass) in a cool dark place or the refrigerator.
