A simple, filling, and delicious way to enjoy cabbage!

I don’t know why it’s taken me so long to share this recipe with you. I guess because I figure it’s so simple, that everyone is making it?!
If you’ve been reading my blog for a while, you probably know that I’m not the biggest fan of vegetables. Sure, I’ll eat them, but you won’t find me going into the fridge, pulling out some veggies, and starting to snack on them.
I like to eat veggies when:
- they are covered in healthy fats
- they are dipped in a delicious dip
- they are fried in or topped with butter
- they are roasted with tons of coconut oil
So basically, I LOVE veggies when they are smothered in healthy fats!!
Before eating lower carb, I used to not eat a lot of veggies. But since eating a little less carbs, I eat a lot more veggies, including cabbage! We never used to eat cabbage, now I have it every week.
You see how carmalized the cabbage gets?! That’s how you want it! Nice and golden brown.
The bacon is optional, and if you want to keep this Paleo because you can’t tolerate dairy, you can sub the butter for butter-flavoured coconut oil or ghee. Or, you can cook the bacon first and then saute the cabbage in the bacon fat – either way, SO good!
It’s a simple and delicious way to enjoy cabbage anytime!
