Chicken Parmesan Meatloaf. A healthy and delicious way to enjoy meatloaf!
I’m super excited to share this recipe with you today.
Growing up as a kid, I used to despise “meatloaf” night. I thought the only thing that should be in loaf-form is bread. Who puts meat in a loaf pan? Not this girl.
Fast forward 10 25 years later, and I marry a guy who wants me to make meatloaf. *Sigh* I try to explain the whole bread-in-loaf-form nonsense, but he doesn’t agree. *Double sigh*
But then I stumble across a recipe that I think I’ll be able to tolerate.
I’ve always loved Chicken Parmesan (the low-fat version of course!), so I figured I would probably be able to force down Chicken Parmesan Meatloaf. I mean, you can’t go wrong with tomato sauce and cheese, right?
Turns out, I didn’t have to force down this meatloaf at all. It was delicious. And I wasn’t the only one that loved it. The whole family ate it. I was hoping for leftovers for my lunch the next day…but there was none left!
Just look at that cheese hanging off the side! Seriously delish.
And the best part, it doesn’t have all the fat and calories that regular chicken parmesan has. It’s made with lean ground chicken (or turkey) and part-skim mozzarella. But it still tastes every bit as fattening as the usual stuff. Like I said, my hubby and 6 year old went back for seconds. And I’m pretty sure I saw them scraping the baked cheese off the pan afterwards!
Now, you I no longer have to be afraid of meatloaf night. I see this recipe becoming part of our regular rotation.
