This healthy crockpot Thai peanut chicken is bursting with flavour and so simple to make. It’s sure to become a family favourite.
As a busy mom to 3 young boys, we are often running around after school to activities, fitting in homework, and finishing up things that need to get done for the day. So I don’t always have time to cook dinner. I’m sure you can all relate!
That’s where the crockpot comes in! I can just get everything ready in the morning, turn it on, and by dinnertime, we have a nice hot meal waiting for us at home.
I’m pretty picky when it comes to crockpot recipes though. I’ve made a few recipes that have come out really dry, like we were eating sandpaper. YUCK. So I like to make ones that have a lot of sauce in them, like our favourite Slow Cooker Honey Sesame Chicken. And now this Thai Peanut Chicken recipe!
Don’t be fooled by the ugly picture (it’s really hard to take pictures of red/orange sauce in the wintertime when I don’t have any natural light at dinnertime.) Just trust me, this Thai peanut chicken tastes amazing!
You can serve this dish over rice or noodles, it’s totally up to you. Or just have it as is. Then serve some nice sweet green peas on the side for a complete meal. Our whole family enjoys this meal, so we hope you do too!
