These Healthy Pumpkin Gingerbread Muffins are super moist, full of flavour, and contain only clean eating ingredients!
My family loves muffins!! The boys like to have them at school for their morning snack, or else after school as a quick and healthy snack on the go. I’ve made pumpkin muffins before, but I wanted to add something new, so when I found these pumpkin gingerbread muffins here, I knew I had to try them.
I love adding purees such as pumpkin to baked goods because not only do they add moisture, but they also add a healthy component! Here are some health benefits of pumpkin:

With Halloween over and winter on it’s way, I figured adding another flavour to these muffins, like gingerbread, seemed appropriate. The whole family enjoyed these muffins! And I love that the recipe makes 24 muffins. Our family goes through muffins pretty quick, so a dozen muffins doesn’t last long in our house! I ended up freezing a dozen of them so we can enjoy them a little later too.
