I don’t know about you, but I love a good casserole. They are easy to make and are the ultimate comfort food.
But when eating low carb, many casseroles are a no go. Most of them contain some sort of pasta or else potatoes. Since we don’t eat those things anymore, we have to get a little creative.
That’s where cauliflower comes in.
Now, you might be thinking, cauliflower? I don’t like cauliflower.
And to that I say, have you ever had it made this way?
Trust me, you can’t even detect the cauliflower taste in this casserole. It’s loaded with so many good things that it hides the cauliflower flavour.
