I thought I would start my very first recipe post of 2016 with chocolate!! I think that’s a good idea, don’t you?!
Maybe you need some help getting back on track with your nutrition after a very busy and indulgent Holiday season. I think we could all use a little reset!! But if you’ve been reading my blog for a while, then you know that I don’t believe in eating just plain, boring, tasteless food to help with weight loss. If I could only have eaten chicken breast, broccoli, and brown rice to lose weight, I would have given up LONG ago. This girl needs some flavour, good food, and chocolate!!!
I’ve attempted mug cakes before, and well, they turned out okay. They weren’t anything spectacular. But this one, O. M. G.! It is so fudgy and chocolaty!! I’m going to say it’s so chocolaty because of the chocolate Shakeology. I’ve tried using chocolate protein powders in the past, and the cake turns out pretty tasteless. But Shakeology is pretty chocolaty on it’s own, so that’s why this cake tastes like it does! I used the vegan chocolate Shakeology because I don’t consume dairy.
You could eat it plain like this, or, you could top it off with some natural peanut butter, sliced banana, and mini chocolate chips like this…
It was amazing!! As you can see, I had to take a piece and try it, just to be sure 😉 Then I let my boys devour the rest. They asked me when I could make it again. And it felt good as a mom knowing that they were getting some healthy protein and fiber in a snack that they loved. Plus it’s low-glycemic so it doesn’t spike your blood sugar!

This Skinny Chocolate Protein Mug Cake makes a great afternoon snack (it’s super filling!) or a delicious and healthy dessert for one. Just stir everything together in a mug, microwave for a couple of minutes and viola, you have a healthy, chocolaty, fudgy, snack!
