Skinny Szechuan Chicken. A healthy alternative to take-out Chinese food!
Do you like Chinese food? I’m talking about good ol’ order-in Chinese food, dripping with grease and bathing in sauce. Every once in a while, my hubby gets a serious craving for the stuff. So, every once in a while we order in Chinese (much to my displeasure!). The only dishes I’ll indulge in is the noodles, stir-fry veggies, and chicken. Even then, I’m pretty much gagging the entire time.
I figure, if I’m not going to let hubby order in Chinese, then I should try to make it…without all the saucy grease! Without further ado, I present to you Skinny Szechuan Chicken.
I absolutely love rice vermicelli noodles, they are my favorite. And they should be your favorite too. They are much lower in calories and fat than regular pasta noodles. To the noodles, I added a ton of veggies plus some lean chicken breast.
The whole family loved this meal. Okay, so maybe it’s not order-in-Chinese, but it sure is a great alternative that is both healthy and tasty!
