It’s that time of year again when the mornings and evenings are getting cooler and the leaves are starting to change colour! It’s the perfect time to cuddle on the couch at night and watch reruns of Seinfeld. No matter how many times I watch that show, I still laugh just as hard 😉
It’s also the perfect time to enjoy some delicious comfort food, don’t ya think?
I’m a huge fan of quiche! I gotta admit, I wasn’t a huge fan when I was a kid, but maybe I never had quiche like this?!
Spinach, bacon, and mushrooms make the perfect combination. Then pair that with some cheese and my favourite Low Carb Pie Crust and you’ve got yourself one delicious meal!
The whole family enjoyed this meal. Even my middle son who is my “picky” eater didn’t complain about the “green stuff!”
We had some leftovers which I froze in individual servings for my lunches. I’m happy to say this quiche freezes really well.
This quiche is definitely going to be a staple in our house during the cooler months.
