Hello! How are you? Did you get through Monday okay? The weather is warming up a little from a weekend of cold and snow. Even thought it’s been a mild winter, I’m still looking forward to spring and summer!
Technically there is still 3 1/2 weeks of winter left, which means I can still enjoy a nice hot bowl of chili. I love chili, and so does the rest of the family. I usually make it with beef, but occasionally, I like to make it with chicken. And why not add a nice “tex mex” flavour to it for something a little different!
Now, doesn’t that just warm your belly? I love the extra spiciness, but if you (or your kids) don’t like spicy, I would recommend leaving out the jalapeno peppers.
This chili would be even more amazing topped with some diced avocado and served with either cornbread or tortilla chips for dipping!
And don’t forget to enjoy the leftovers for lunch the next day.
